Jeff Makes Stuff: Canelés

The first time I saw a canelé was inside Pine Street Market in Portland. I don’t think we purchased one, but I remember wondering what was inside and if they were tasty. Jeff recently decided to try making these at home and purchased some molds at Sur La Table. It took him a few tries to get the process down to the level of science he prefers (aka understanding baking times for our particular oven to avoid underdone bottoms when they come out of the molds), but he can now bake these treats up without issue. The outside has a caramelly crunch while the inside is soft with a great vanilla flavor. If you haven’t tried one, I suggest you do - they are quickly becoming one of my favorite baked goods.
