Sarah Bakes: Confetti Cookies

As previously stated in my Peeps shortbread cookies post, Jeff likes to make a baked good to take into work on Mondays. He was unavailable to make a baked good this week so I decided to practice my almost never used baking skills again. This time I was inspired by the confetti cookies that recently showed up at Costco’s bakery - they don’t appear to be the prettiest cookies in the world, but I bet they taste pretty great just like most other Costco baked goods.

 
 

I used Preppy Kitchen’s funfetti cookie recipe and it was a fairly quick bake even for someone who is excessively slow at kitchen tasks like me. The end result was decently chonky cookies that were fairly soft (though I think I could’ve pulled them out of the oven a bit earlier for an even softer texture - I’m just paranoid about them being not done enough) and they smelled like buttery baked good heaven. These cookies got a great review from Jeff’s coworkers so I’m calling it another win for my solo kitchen adventures.
